Beef: 

Grass fed only beef

  • Our Angus beef cattle are grass-fed all the way through their life. They are fed hay during the winter months. Then they are then finished on green pastures during the summer. This beef is leaner than your normal beef and provide higher omega-3 fatty acids profile which can only be obtain from fresh grass.
  • Prices are $3.5/lb carcass weight plus processing/butcher fees.  (half & whole beef are discounted)
  • Processing cost are $.82/lb/quarter or $.80/lb for half & whole cow.
  • A Carcass weight for a whole steer are approximate 750-850 lb.
  • Example:
    • Quarter cow – 200 lb x$3.5/lb = $700
      •   Butcher – 200 lb x $.82/lb = $164
    • Half cow – 400 lb x $3.5/lb = $1400 – $75 discount= $1325
      • Butcher – 400 lb x $.80/lb = $320
    • Whole cow – 800 lb x $3.5/lb = $2800 – $200 discount= $2600
      •  Butcher – 800 lb x $.80/lb = $640
  • A typical quarter of a cow will yield approximately 140 lbs of package meat.
  • Beef is processed at LGCM in Lake Geneva, WI or Sorg in Darien, WI

Grass-fed/corn finished

  • We also raise a more conventional Angus beef (economical and great tasting).  These Angus steer are on pasture during the summer and then finished in winter months on a corn/hay diet.
  • This beef is only available during the end of winter.
  • Prices are $3/lb carcass weight plus processing/butcher fees.  (Half & whole beef are discounted)
  • Processing cost are $.82/lb/quarter or $.80/lb for half & whole cow.
  • A Carcass weight for a whole steer are approximate 750-850 lb. (depending on size of animal)
    • Example:
      • Quarter cow – 200 lb x $3.0/lb = $ 600
        •   Butcher – 200 lb x $.82/lb = $164
      • Half cow – 400 lb x $3/lb = $1200 – $75 discount= $1125
        • Butcher – 400 lb x $.80/lb = $320
      • Whole cow – 800 lb x $3.0/lb = $2400 – $200 discount= $2200
        •  Butcher – 800 lb x $.80/lb = $640
  • A 200 lb carcass quarter will yield approximately 140 lbs of package meat.
  • Beef is processed at LGCM in Lake Geneva, WI or Sorg in Darien, WI

Pork

  • Our pigs are raised in a free range environment, they are free to rut in the pasture, make mud holes, and be pigs.
  • They are fed a corn/soy feed, scraps from the garden, and whatever else they find in the pasture.
  • The pigs are available only in October. (please contact us to order, we usually sell out by summer)
  • Prices are $1.65/lb hanging weight plus processors/butcher fee.
  • A carcass weight is around 200 lbs.
  • We sell halves or whole only.
  • Example:
    • Half hog – 100 lb x $1.65/lb = $165
      • Butcher – 100 lb x $.65/lb = $65
    • Whole hog – 200 lb x $1.65/lb = $330
      • Butcher – 200 lb x $.65/lb = $130
  • A typical whole hog will yield approximately 157 lb of packaged meat.
  • Butcher pricing for hogs will be extra for processing brats, sausage, or smoking.
  • All our pork is processed at Eickmans in Seward, IL

Ready to Order? 

  • Please contact us as soon as possible so we can assign you the appropriate butcher date. After we reserve your order, we will be in contact with you through email when the animal goes to the butcher.
  • We will then bill you once the butcher notifies us the hanging weight of your animal.
